Study Snacks Video: Chocolate Chip Protein Bars

Exercising is an important part of being healthy, but so is eating right. While training for our Homecoming Virtual 5K, you may want to reward yourself for your progress with a delicious dessert. These no-bake, chocolate chip protein bars are packed with protein, healthy fats and fiber, making them a guilt-free snack to satisfy your hunger – and your sweet tooth.

In our Study Snacks series, we’re highlighting recipes that can help power you through your homework. Made from gluten-free and dairy-free ingredients, these protein bars take just 10 minutes to prepare, so they’re great to eat between writing a paper and running on the treadmill. Ingredients

  • 2 cups gluten-free oat flour
  • ½ cup coconut flour
  • ½ cup vanilla or chocolate protein powder
  • 1-2 tablespoons cocoa powder (adjust for flavor)
  • 1 tablespoon beet powder (optional)
  • 2 tablespoons sweetener
  • ½ cup almond butter
  • ½ cup brown rice syrup
  • 1 teaspoon vanilla extract
  • 5 tablespoons of dairy free milk
  • Mini chocolate chips

Directions

  1. Line a large baking dish with greased paper.
  2. Combine the flour, protein powder, cocoa powder, beet powder and sweetener into a large microwave safe bowl and mix well.
  3. Combine almond butter, brown rice syrup and vanilla extract and heat until melted in a large microwave safe bowl or stovetop.
  4. Pour the wet mixture into the dry mixture and mix well – the texture should be crumbly.
  5. Add the dairy free milk and mix.
  6. Stir in chocolate chips and incorporate.
  7. Transfer to the lined baking dish and press firmly.
  8. Refrigerate until firm.
  9. Slice up and enjoy!
